A hearty & healthy Saturday brunch

It’s Saturday!! ♥ This week has been a productive one for me – I finished work on a big regulatory programme (start a new exciting one on Monday), organised a hen party and bought a new phone! And now it’s my favourite day of the week 🙂

Talking of the former poor overhung button , she’s a good’n and just rustled this Saturday lunch up for us – all from our leftovers from the week!

I just love it when a use up the week’s leftovers turns into a hearty, balanced & healthy dish ♥ A bean burger on a bed of salad, with toasted wholemeal wrap cut into tortilla chips, houmous, guacamole and pan-fried garlic mushrooms on the side. The perfect thing to line our stomachs ahead of an afternoon catching up with friends in out usual haunt – Borough Market. Dinner is obviously going to be a Big V burger, it is Saturday after all!
