My lovely friend Insa from Germany is arriving today ahead of the new year celebrations, and we thought we would kick off the party a day early by indulging in a bottomless cava & tapas brunch near London Bridge! As much as I can’t wait for the unlimited cava, December does take it’s toll and I find myself craving a healthy food filled January!
One dish that I will most certainly be making in January is this healthy Buddha bowl. It is so quick and easy to make.
- Cook up or microwave some wholegrain freekeh or brown rice
- Roast your vegetables of choice
- Once roasted, stir-fry the vegetables with garlic, red chillies, turmeric & peas
- Top with coriander, avocado, sun-dried tomatoes & mixed seeds.
Et voilà! Perfect quick dish to try in Veganuary, with lots of natural flavours. I only tried freekeh for the first time in 2017; nutty grains of wheat that are harvested at their nutritional peak, containing four times the fibre of brown rice and twice the protein of white rice. It also has prebiotic properties to ease digestion. Goodness with a capital G!
